FAMILY EDITION
MONDAY
Breakfast:
Date Molasses and Olive Oil Granola
Dinner:
Gnocchi with Oak Smoked Paprika Pesto and Pork Sausage
Inspiration:
Granola is one of those things that is far easier to make than perhaps people realise. This recipe can be used as a template, so customise it to your liking, or whatever is in your cupboard, by using different nuts, seeds and spices, even roasted oats with honey will work! Date molassesis used instead of honey or maple syrup, but you can also use Sour Cherry Molasses, or whatever sweet syrup you think would work from your cupboard.
Traybakes make dinner simple and quick to start the week, and this one uses sausages to create tasty meatballs, that can be used up in pasta or for breakfast later in the week. If you don't have gnocchi, chickpeas would also do.
Tuesday
Breakfast:
Baked Porridge with Apples Walnuts Honey Tahini and Blackberries
Dinner:
Cod and New Potato Tagine
Inspiration:
Porridge is a great recipe to cook in the evening and then reheat in the mornings for breakfast. With drizzles of tahini and honey making it a sure success with the family, double up the recipe so you can have it again and again! If you don't have berries, bananas or other seasonal fruit will pack as much flavour. Tahinican be used to make energy balls to keep you going through the week.
This Cod & Potato Tagine is a real winter warmer. Quick, easy & nutritious, this is comfort food for all the family. Add bread to dip. If you have some leftover sauce, use it as the base for fish soup. If you want to spice it up, use Rose Harissa instead (use less if you are averse to spice). This meal gets better with age as flavours soak further in, so is just as delicious reheated the next day.
wednesday
Breakfast:
Omelettes with Wild Mushroom Pesto
Dinner:
Chicken, Spring Greens, Cannellini Beans and Pancetta Tray Bake with Pea and Mint Pesto and Pecorino
Inspiration:
These recipes are healthy, easy and popular family favourites. Pestos are used in both, and you can mix and match to whichever pesto suits you best! For the omelette, fill with whatever greens or veggies you have in the fridge. Eggs are a breakfast staple and can be finished on a weekend breakfast with hash browns.
This one pot chicken bake is a real crowd pleaser with minimal washing up! Any extra chicken can be used up for lunch sandwiches, adapt the recipe to suit what bread and extra salad filling you have in your fridge.
Thursday
Breakfast:
Cheesy Croissants
Dinner:
Lasagne
Inspiration:
Croissants with an extra dollop of flavour and tangy cheese, these can be stuffed with bacon, onions, tomatoes or whatever needs using up. Finishing the day with a spinach and ricotta Lasagne is equally as comforting yet perhaps a little healthier. Reheated, it makes a real treat when working from home. Pestos can be swapped in and out to your favourites. Favourites for this recipe are Genovese or Vegan Basil Pesto, and Rose Harissa Pesto
Friday
Breakfast:
Eggs & Hash Browns
Dinner:
7 Ingredient Pizza
Inspiration:
The eggs you have left from the omelette are a great start to a Friday breakfast! Celebrate the start of the weekend by adding hash browns (and even bacon) to your dish. Our original recipe also includes Smoked Chilli Ketchup, but don't be afraid to use something else if you don't have it, like Ve-Du-Ya Paste or even a pesto of your choosing. Why not use up some of the pestos from the Lasagna and make pesto eggs
7 ingredient Pizza is one of our most visited recipes, simple, easy and only 7 steps to a finished pizza. If you have any extra veggies, salad or meat, you can sprinkle over the pizza for added flavour. Don't be discouraged by dough making
