Indulge with Angela Hartnett’s Christmas Strudel. Bursting with the flavours of apples, cranberries, and our award winning Sour Cherry Molasses, it brings a delightful twist to your festive celebrations.

Ingredients
  • 500g Filo pastry
  • 1 tbsp Brown sugar
  • 200g Butter, melted
  • 2 Bramley apples
  • 2 Eating apples
  • 50g Frozen cranberries
  • 1/2 tsp Cinnamon
  • 150g Mincemeat
  • 1 Orange rind
  • 1 Belazu Sour Cherry Molasses
Method
  • Step 1: In a pan, add a few tablespoons of the melted butter. Add the brown sugar, apples, cranberries, cinnamon and orange zest.
  • Step 2: Cook for about 10 minutes until the cranberries soften. Add the mincemeat, stirring to combine. Remove from the heat, and allow to cool. Take the filo pastry and cover with a damp cloth so it does not dry out.
  • Step 3: Place one sheet of filo on the tray and brush with butter. Add another sheet placed halfway across the first sheet and brush with butter. Repeat this process another two times, so 6 sheets in total.
  • Step 4: Add one-third of the apple mix onto the filo, leaving a gap at either end and then roll the filo so the seal sits flat on the tray.
  • Step 5: Cover with a touch more butter, sprinkle with sugar, and brush with Sour Cherry Molasses.
  • Step 6: Bake in a preheated oven at 180 degrees until golden brown for 25 minutes, until the filo is nice and crispy. Serve with vanilla cream.
