Find comfort in every mouthful of this hearty steak sandwich, where the robust flavours of mushrooms and caramelized onions are enhanced by the creamy richness of mayo and the smoky notes of the cheese.
Ingredients

4 tbsps Good-quality mayonnaise

2 tbsps Flavour Hacks Caramelised Onion

2 tbsps Early Harvest Extra Virgin Olive Oil

4 Portobello mushrooms

Salt and pepper to season

8 Smoked cheese slices

4 Ciabatta rolls

1 Baby gem, leaves separated

2 Plum tomatoes, thinly sliced

2 Handfuls olive oil crisps
Method
- Step 1: Mix the mayonnaise and Flavour Hacks Caramelised Onion. Keep to one side.
- Step 2: Heat the oil in a thick-bottomed frying pan. Lay in the mushrooms and season generously with salt and pepper. Press down with a large pan or weight and cook for 4-5 minutes.
- Step 3: Once tender and caramelised on one side, turn the mushrooms over. Lay 2 slices of cheese on each mushroom, then splash a little water into the pan and immediately cover with a lid to melt the cheese with the steam.
- Step 4: Toast the ciabatta, ready to assemble.
- Step 5: Spread the caramelised onion mayo into the toasted ciabatta. Lay in the baby gem along with the sliced tomatoes and top with the cooked mushroom. To finish, crumble the olive oil crisps into the melted cheese and top with the remaining ciabatta.
