Ingredients
  • 4 Eggs, seperated
  • 75g Caster sugar
  • 350g Mascarpone
  • 100g Double Cream
  • 50g Tahini
  • 100g Coffee
  • 1 tbsp Dark rum
  • 20 Savoiardi Biscuits
  • 4 tbsps Pomegranate Molasses
  • 50g Dark chocolate - for grating
Method
  • Step 1: Tip the egg whites into a clean metal bowl and whisk to stiff peaks, either by hand or using an electric mixer. Set aside.
  • Step 2: Tip the yolks and sugar into a separate bowl and whisk until pale yellow and thickened. Add the mascarpone, cream, and tahini, then whip together until the cream thickens.
  • Step 3: Use a metal spoon to gently fold the egg white into the yolk and cream mixture, a third at a time, until well combined. Set aside.
  • Step 4: Pour the coffee and rum into a shallow tray, then set a serving dish next to it. Turn the savoiardi biscuits in the liquid, then line the base of the serving dish with them. Drizzle with some of the pomegranate molasses, then top with half of the cream mixture. Repeat the previous steps to create a two-layered tiramisu.
  • Step 5: Finish by grating over the dark chocolate, then chill for a minimum of 4 hours before serving. Drizzle over more pomegranate molasses if you like!
