Celebrate the season with the sophistication of Rose Harissa & Honey Glazed Salmon. Its spicy-sweet fusion, complemented by pomegranate seeds and pistachios and the freshness of mint, creates a harmonious burst of flavours, perfect for a joyful family feast.

850g Side of salmon

Salt, to season

3 tbsps Rose Harissa

2 tbsps Honey

2 tsps Pomegranate seeds

1 tbsp Mint, finely sliced

1 tsp Pistachios finely chopped

Early Harvest Extra Virgin Olive Oil, to drizzle
Method
- Step 1: Heat your oven to 180C fan. Line a baking tray with parchment, then lay the side of salmon on top. Pat dry with kitchen paper, then lightly season with salt.
- Step 2: Mix together the Rose Harissa and honey in a small bowl, then spread over the salmon, making sure it is evenly coated. Place into the oven and bake for 20 minutes, removing every so often to spoon over the cooking juices. Leave to rest for 20 minutes before serving.
- Step 3: To serve, carefully lift the salmon onto a serving platter. Scatter over the pomegranate seeds, mint and pistachios. Finish with a drizzle of Early Harvest Extra Virgin Olive Oil.
