Celebrate the season with the bold and aromatic Rose Harissa Tuna Tartare. Its vibrant colours and enticing flavours make it an ideal appetizer to get the celebrations rolling!
Ingredients

500g Tuna loin

2 tbsp Rose Harissa

A squeeze of Lemon juice

1 tsp Salt

2 heads Baby gem lettuce

2 Spring onions, finely sliced

25g Fresh coriander, chopped

1 tsp Cumin
-
2 tsps Sesame seeds

Early Harvest Olive Oil to drizzle
Method
- Step 1: Dice the tuna into 3cm chunks. Tip into a small bowl with the Rose Harissa, lemon juice and salt. Set aside for 10 minutes to marinate.
- Step 2: Meanwhile, cut away the base of the baby gem and separate the leaves. Wash in ice-cold water, then arrange over a clean tea towel to dry.
- Step 3: Mix the spring onion, coriander, cumin and sesame seeds into the tuna. Taste and adjust the seasoning as you like.
- Step 4: To serve, spoon the tuna mixture into the lettuce leaves, then arrange onto a serving platter. Finish with a drizzle of Early Harvest Olive Oil.
