Celebrate the season with the bold and aromatic Rose Harissa Tuna Tartare. Its vibrant colours and enticing flavours make it an ideal appetizer to get the celebrations rolling!

Ingredients
  • 500g Tuna loin
  • 2 tbsp Rose Harissa
  • A squeeze of Lemon juice
  • 1 tsp Salt
  • 2 heads Baby gem lettuce
  • 2 Spring onions, finely sliced
  • 25g Fresh coriander, chopped
  • 1 tsp Cumin
  • 2 tsps Sesame seeds
  • Early Harvest Olive Oil to drizzle
Method
  • Step 1: Dice the tuna into 3cm chunks. Tip into a small bowl with the Rose Harissa, lemon juice and salt. Set aside for 10 minutes to marinate.
  • Step 2: Meanwhile, cut away the base of the baby gem and separate the leaves. Wash in ice-cold water, then arrange over a clean tea towel to dry.
  • Step 3: Mix the spring onion, coriander, cumin and sesame seeds into the tuna. Taste and adjust the seasoning as you like.
  • Step 4: To serve, spoon the tuna mixture into the lettuce leaves, then arrange onto a serving platter. Finish with a drizzle of Early Harvest Olive Oil.
