This comforting, healthy recipe is packed with seeds, oats and nuts, making it chewy and satisfyingly crunchy! Drizzled with our Sour Cherry Molasses, it brings a burst of tangy sweetness.
Ingredients

Granola
100g of almonds -
100g of pecans

150g of plain oats

100g courgette seeds

100g sunflower seeds

3 TBSP of maple syrup

3 TBSP of coconut oil

1 heaped tsp of cinnamon

Drizzle of Sour Cherry Molasses

To Serve
4 generous spoonfuls of plain yoghurt -
20g of raspberries

20g of blueberries
-
Drizzle of Sour Cherry Molasses (optional)
Method
- Step 1: Blitz the almonds and pecans separately in a food processor for a few seconds until the nuts are in small chunk size pieces.
- Step 2: Add the courgette and sunflower seeds, oats, and blitzed nuts to a baking tray and spread them evenly.
- Step 3: In a saucepan on a low heat mix the coconut oil, maple syrup and cinnamon for a couple of minutes until it is a golden brown liquid. Pour this evenly across the granola mix and drizzle some Sour Cherry Molasses before mixing well.
- Step 4: Place in the oven at 160 degrees (fan oven) and cook for 4 mins. Mix and place back in for a final 4 minutes.
- Step 5: Allow a few minutes to cool and serve with plain yoghurt, raspberries and blueberries. If you feeling extra adventurous, drizzle some Sour Cherry Molasses to finish.
