Sweet Potato and Caramelised Onion Bucatini Pasta Bake with a Roasted Garlic, Lemon and Parsley Pangrattato

Ingredients
  • 3 Medium sweet potatoes (approx 900gr), peeled and cut into 1 inch cubes
  • 100ml Belazu Early Harvest Olive Oil
  • 500g Waitrose No1 Bucatini
  • 2 tbsps Belazu Flavour Hacks Caramelised Onion
  • 150ml single cream
  • 100g Waitrose No1 Parmigiano Reggiano DOP, grated
  • 50g parsley, chopped
  • 100g Waitrose Cook’s Ingredients soft white bread crumbs
  • 2 tbsps Belazu Flavour Hacks Roasted Garlic
  • Zest of 1 lemon
  • Salt and pepper, to season
Method
  • Step 1: Preheat the oven to 180C fan and lightly oil a 30x20cm ovenproof dish. Coat the cubed sweet potatoes in 50ml Belazu Early harvest olive oil, season with salt and pepper and roast in the dish for 25-30 minutes until soft.
  • Step 2: In the meantime, bring a large saucepan filled with water to a boil. Season well with salt and cook the No1 Bucatini according to packet instructions. Reserve 2 cups/500ml of the pasta water. Drain, put into the oiled dish, and dress with Belazu Early Harvest olive oil to avoid sticking.
  • Step 3: When the sweet potato is cooked, add it to a blender along with the reserved pasta water, the Belazu Flavour Hacks Caramelised Onion, cream, and 50g of the grated Parmigiano Reggiano DOP. Blend until smooth and season with salt and pepper to taste.
  • Step 4: Add the sweet potato sauce along with half the chopped parsley to the cooked bucatini in the oiled ovenproof dish and mix. Taste and season with salt and pepper.
  • Step 5: Mix the rest of the Belazu Early Harvest Olive Oil with the Belazu Flavour Hacks Roasted Garlic in a medium bowl. Add the breadcrumbs and lemon zest along with the rest of the chopped parsley and grated parmesan and mix. Sprinkle the mix over the pasta and bake at 180C fan for 25-30 minutes or so until the top is golden and the pasta is piping hot.
