Chantelle Nicholson is a multi-award-winning chef, restaurateur, author and advocate.  She is the founder of Apricity Restaurant, in London’s Mayfair, which celebrates conscious cooking and joyful dining, which gained a Michelin Green Star in 2023. Chantelle is an advocate for seasonality, circularity and regenerative restaurants. 

 

Originally from New Zealand, and a trained lawyer, Chantelle is committed to creating a more sustainable future across her operation and activities, whilst also being an independent board member for ReLondon and a Food Council member for City Harvest, to whom Belazu donate surplus food. This year, Chantelle also became an ambassador to one of the Belazu Foundation beneficiaries, Chefs in Schools.

The people that I have had the privilege to work in a team with - past and present - and to watch them grow and prosper.

WHAT'S YOUR GO-TO COMFORT DISH?

Buttered cabbage, a fried egg and crispy chilli oil.

WHAT ARE YOUR FAVOURITE RESTAURANTS AT THE MOMENT - THE ONES TO WATCH?

That is a very hard question to answer! I love Supawan Thai food in King’s Cross, and I had memorable meals at The Midland Grand & The Sportsman earlier this year. There’s so much going on in London right now, and so many restaurants on my list to try - it just seems to get longer!

WHAT IS KEY IN CREATING A GREAT DISH?

Having a great balance of flavour from start to finish.

WHAT ARE YOUR TOP BELAZU PRODUCT PICKS? WHAT DO YOU USE THEM ON MOST?

I adore the Smoked Chilli Harissa, and the Vermouth Vinegar. The harissa makes a great marinade and dressing, and the Vermouth Vinegar lifts any dish - try popping it in a spray bottle and spritzing it!
