Inspired by the traditional dish from Bari in Puglia, this pasta is cooked raw in passata and Rose Harissa, resulting in crispy, caramelised mouthfuls with an intense, warming tomato flavour.
Ingredients

1 litre water

150g tomato concentrate

100ml Belazu Crete Gold Extra Virgin Olive Oil + more to drizzle

2 tbsp Belazu Rose Harissa

1 tbsp Belazu Roasted Garlic Flavour Hack

300g Belazu Strozzapreti

200ml passata

Salt and pepper, to season

100g straciatella, or a vegan alternative if you prefer
Method
- Step 1: Create a tomato stock by combining the water and tomato concentrate in a saucepan. Bring this to a boil over a high heat, whisking to combine. Once dissolved, set aside over a very low heat.
- Step 2: Set a wide, thick bottomed pan (ideally cast iron) over high heat. Pour in the olive oil then spoon in 1 tbsp of the Rose Harissa and the Roasted Garlic Flavour Hack. Fry for 20 seconds then tip in the raw Strozzapreti and stir to combine.
- Step 3: Stir through the passata and season with 1 tsp of salt. Use a spoon to spread the pasta evenly across the base of the pan and leave to sit. The idea here is to not agitate the pasta too much so a charred crust forms on the pasta touching the pan.
- Step 4: As the passata begins to dry out, ladle over 1/3 of the tomato stock. Do not stir through the pasta, allow it to seep through. After 5 minutes or so, once the stock has cooked out, scrape the bottom of the pan to reveal the dark, crispy pasta beneath. Turn the pasta over to introduce the uncharred side to the bottom of the pan. Spread the pasta out evenly and repeat until all the stock is used up and the pasta is soft enough to eat.
- Step 5: When ready to serve, stir through the remaining tablespoon of Rose Harissa and remove from the heat. Check and adjust the seasoning to your liking.
- Step 6: Allow to cool for a minute or two, if you can resist, then spoon the straciatella into the centre. Finish with a generous drizzle of Crete Gold EVOO.
