Smash Burger with Harissa Feta

This is a simple yet elevated burger recipe using our new Harissa Mayonnaise stirred into whipped feta for a Belazu twist. Add your favourite burger toppings and serve with fresh summer salads at gatherings with family and friends.
Ingredients

100g feta

100g Harissa Mayonnaise

240g Beef Mince, split into 4 x 60g balls

4 slices American cheese

1 onion, diced and fried until soft and sweet

2 burger buns

50g shredded lettuce

6 slices of dill pickles
Method
- Step 0: In a food processor, whip the feta and mayo together then set aside.
- Step 1: Cut out a 10cm square of parchment paper. Set a large frying pan (ideally cast iron) over high heat. Drizzle in some oil then place the balls into the pan. One by one, lay the parchment paper over a ball then use a burger press (or a small bowl or saucepan) to press the ball into a thin patty. Repeat until all the balls have been pressed. Season generously with salt and pepper.
- Step 2: As the patties cook you will see they begin to darken in colour. Once they have almost darkened completely, flip them and season the other side of the patty.
- Step 3: Cover each patty with a slice of American cheese and some of the fried onions then cover the pan with a lid and cook for 1 minute.
- Step 4: Toast the burger buns and spread generously with the whipped feta and scatter over the iceberg lettuce. Stack the patties in the pan into two stacks of two then transfer onto the bottom half of the bun. Top with 3 slices each of the dill pickles and serve.
