Sour Cherry Harissa Pilaf

Transform your ordinary weeknight dinner with the perfect balance of sweetness and heat in this pilaf, ideal for when you want to treat yourself.
Ingredients

1 Tbsp of Early Harvest Extra Virgin Olive Oil

4 Waitrose Sweet Kingdown Coloured Carrots, peeled and grated

2 tbsps Belazu Sour Cherry Harissa

300g Waitrose Aged Basmati Rice

75g Dried sour cherries

600ml Water

2 tsps Sea salt

2 tbsps Fresh dill, finely chopped
Method
- Step 1: Set a wide-based pan over high heat, then add the olive oil and tip in the grated carrots. Cook for 7-8 minutes until softened and glossy, stirring frequently.
- Step 2: Add the Sour Cherry Harissa and fry for 1 minute.
- Step 3: Tip in the rice along with the dried sour cherries and stir together with the harissa and carrots.
- Step 4: Add the water and salt, then bring to a boil, stirring occasionally, then cover with a lid and immediately reduce the heat to low. Cook for 15 minutes.
- Step 5: Remove from the heat, then let stand for a further 5 minutes. Use a fork to fluff the grains of rice gently, then serve.
