Treat yourself with Sour Cherry Molasses Pavlova, a dessert crafted for celebrations. Cherries, tangy molasses, and pistachios combine for a delightful burst of flavours.
Ingredients

6 Large egg whites

350g Caster sugar

1 tsp Vanilla extract

100ml Tahini

1 tbsp Caster sugar

800g Cherries

2 tbsps Sour Cherry Molasses

50g Pistachio
Method
- Step 1: Pit and chop 800g cherries into quarters. Place on a baking tray and drizzle with 2 tbsp of Sour Cherry Molasses and a tbsp of sugar, then mix it all together. Place in the oven at 180C (Fan) for 15 mins.
- Step 2: Crack 6 eggs, separating the whites from the yolks. Pour the egg whites into an electric food mixer and whisk for a few minutes until they form stiff peaks. Add 175g of sugar, one tablespoon every 10 seconds. You will be left with a marshmallow-like texture. Pro tip: Measure your plate by placing it upside down on some baking paper and tracing the outline with a pencil.
- Step 3: Spread the mixture evenly on the baking paper within the pencilled outline and repeat for the second tier. Place in the oven for 1 hour at 140 degrees (fan oven).
- Step 4: For the Tahini mixed cream: Pour 600ml of double cream, 1 tbsp of vanilla extract, and 1 tsp sugar into the electric food mixer and whisk for about 2-3 minutes until it begins to thicken. Then add 100 ml of mascarpone and whisk for a further minute.
- Step 5: Once the meringues have cooked, place one of the meringues on the plate. Add the cream to the centre before placing the second meringue on top. Finally, add the baked cherries along with some fresh cherries and a generous drizzle of Sour Cherry Molasses.
