Sticky Balsamic Glazed Cauliflower Bites

Enjoy the crispy outer texture of these cauliflower bites, perfectly complemented by the sticky and flavorful balsamic glaze that coats each floret.
Ingredients

For the Cauliflower
1 head of Cauliflower broken into large florets -
200g Plain flour

200ml Vegan milk

150g Panko breadcrumbs

For the Sauce
50ml Belazu Balsamic Vinegar of Modena 1.34 -
80ml Light soy sauce

20ml Dark soy sauce
-
40g Golden syrup
-
150ml water + 2 tbsp for later

1 heaped tbsp Cornflour

To Garnish
1 Red chilli, finely sliced -
1 tsp White sesame seed

2 Spring onions, finely sliced
Method
- Step 1: Tip the cauliflower florets into a large bowl, then cover with water and season with plenty of salt. Leave to sit for 5 minutes. This helps to season the cauliflower and help the coating adhere to it.
- Step 2: Set 3 bows or trays onto your work surface. Fill one with the flour, another with the milk, and another with the panko breadcrumb. Get another tray and sit a cooling rack into it.
- Step 3: Lift the cauliflower florets out of the water and lay them into the flour. Toss them around to make sure they are fully coated. Do the same with the milk and panko, then arrange them onto the cooling rack with plenty of space between each floret. Leave to sit for 15 minutes. Set your oven to 200C.
- Step 4: Meanwhile, make the sauce. In a small pan, heat the balsamic vinegar, light soy, dark soy, golden syrup and 150ml water over hight heat. Mix 2 tbsp water with 1 tbsp cornflour in to a slurry then, when the sauce comes to the boil, pour it in an stir vigourously until the sauce thickens. Remove from the heat and set aside.
- Step 5: Put the tray of coated cauliflower into the oven and cook for 15-18 minutes until golden brown and crispy all over.
- Step 6: When cooked, tip the cauliflower into a large mixing bowl. Drizzle over the sauce and half the sesame seeds. Toss together to evenly coat the cauliflower.
- Step 7: o serve, pile into a shallow dish and scatter over the red chilli, spring onion and remaining sesame seeds.
