I’ve chosen my harissa orzo with mascarpone and parmesan recipe as I love a quick yet flavourful recipe, especially when I work from home. It comes together in no time and is super simple and packed with flavour. It all comes together in one saucepan, so the washing up is minimal, which is an extra win! How did you find your love for cooking? 

Food was always my main interest. When growing up, my mother grew most of the vegetables we ate, so the ingredients for me to play around with were never far away. Other family members have always been keen hunters, so I was, or still am, very lucky to cook with fantastic produce.

What is your favourite type of cuisine to cook? 

This changes all the time, but currently, I would say Middle Eastern, Southeast Asian and Italian, can’t go wrong!

How would you describe your personal cooking style? 

Simple, seasonal and full of flavour! I love picky bits and sharing plates. 

What would be your chosen last meal on earth? 

My mother’s elk stew with red wine, chanterelles and blue cheese, it’s unbelievable.

 

What is the first Belazu product you ever tried? 

My obsession with pomegranate molasses started with you guys!

Ingredients
  • 300g orzo
  • 600ml vegetable stock
  • 3 tbsp Belazu Rose Harissa
  • 100g mascarpone cheese
  • 50g parmesan
  • 1 lemon, juice and zest
  • Handful of parsley or basil
  • Extra chilli flakes if you like it spicy
Method
  • Step 0: Start by bringing the vegetable stock to a boil and add the orzo; simmer for 7-8 minutes or according to the instructions on the packaging. You do not want to drain the orzo as you are looking for a risotto-like consistency.
  • Step 1: Whilst the orzo is cooking, chop the herbs and grate the parmesan.
  • Step 2: When the orzo is cooked, add the Rose Harissa paste, mascarpone, herbs, lemon juice and zest and finally, the parmesan to the same saucepan. Add a splash of water to loosen if needed. Give it all a good stir and season to taste.
  • Step 3: Serve immediately with extra parmesan on top.
